Spanish Striper

2 nice fillets from a smaller keeper striped bass...1/4 teaspoon salt...1/4 teaspoon pepper...1/4 teaspoon nutmeg...1 large onion, thinly sliced...2 tablespoons diced pimentos...6 thick slices tomato...3 teaspoons chopped green onion...1 cup mushrooms, thinly sliced...1/2 cup dry sherry or white wine...1 cup bread crumbs, toasted.

wipe fish with a damp cloth. Sprinkle with salt, pepper and nutmeg.  Arrange onion slices and pimentos in bottom of 12x8 baking dish.  Top with seasoned fish slices, arranged side by side.  Cover each piece with the tomato slices.  Sprinkle with green onions.  Scatter mushrooms all over.  Add wines and top with bread crumbs.  Bake uncovered at 350 for 35-40 minutes or until fish flakes easily...........The smaller keepers are sweeter.
